  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/4 cup sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 3 cups peeled and chopped apples
  • 1/2 cup caramel topping

Instructions

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, mix together graham cracker crumbs, melted butter, and 1/4 cup sugar. Press mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese, 1 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition. Pour mixture over crust.
  • Bake in preheated oven for 60 minutes. Turn off oven and leave cheesecake in oven with the door closed for 1 hour.
  • Chill in refrigerator for at least 4 hours, or overnight.
  • Before serving, top with chopped apples and drizzle with caramel topping.
