These Butternut Cookies are a delightful combination of buttery, melt-in-your-mouth cookies topped with a sweet rum glaze and finished off with crunchy pecans. For the Cookies:

  • 3/4 cup butter, room temperature
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 3/4 cups all-purpose flour
  • 1 package (6 oz.) butterscotch chips
  • 1 cup finely chopped pecans

For the Rum Glaze:

  • 3 cups powdered sugar
  • 3 to 4 tablespoons milk or water
  • 1 teaspoon rum extract

For the Topping:

  • 1/2 cup chopped pecans

Instructions

  • Prepare the Cookie Dough: Preheat the oven to 350°F (175°C). In a large bowl, cream together the butter and powdered sugar until light and fluffy. Add the salt and flour, and mix until combined. Stir in the butterscotch chips and finely chopped pecans.
  • Shape the Cookies: Roll the dough into 1-inch balls and place them on an ungreased baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with your fingers or the back of a spoon.
  • Bake the Cookies: Bake in the preheated oven for 12-14 minutes, or until the cookies are lightly golden around the edges. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Make the Rum Glaze: In a medium bowl, whisk together the powdered sugar, 3 tablespoons of milk or water, and rum extract until smooth and pourable. If the glaze is too thick, add the remaining tablespoon of milk or water to reach the desired consistency.
  • Glaze the Cookies: Once the cookies have cooled, drizzle the rum glaze over the top of each cookie.
  • Add the Topping: Sprinkle the chopped pecans over the glazed cookies while the glaze is still soft.
  • Serve and Store: Let the glaze set for about 30 minutes before serving. Store any leftover cookies in an airtight container at room temperature for up to 1 week.

Notes

  • If you prefer a stronger rum flavor, you can use real rum in place of rum extract for the glaze, but be aware that this will alter the texture of the glaze slightly.
  • These cookies are great for gifting, as the combination of butterscotch, pecans, and rum glaze makes them a special treat.
  • You can substitute the butterscotch chips with caramel chips if you prefer.
