  • 4 boneless chicken breasts (approximately 950g), cut into bite-sized cubes
  • 4 tablespoons olive oil (or Greek yogurt for a tangier marinade)
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon Espelette pepper (optional)
  • 2 teaspoons Herbes de Provence
  • 2 heaped teaspoons of Dijon or whole-grain mustard
  • 1 small onion, finely grated
  • 1 clove garlic, finely grated
  • Salt, to taste
  • Cayenne pepper (optional, for extra heat)

Instructions

  • In a large mixing bowl, combine the olive oil (or Greek yogurt), paprika, cumin, Espelette pepper (if using), Herbes de Provence, Dijon mustard, grated onion, grated garlic, and a pinch of salt. Stir well until all the ingredients are evenly mixed.
  • Add the chicken cubes to the bowl and toss them in the marinade until fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.
  • Preheat your grill or grill pan over medium-high heat.
  • Thread the marinated chicken cubes onto skewers, making sure they are evenly spaced.
  • Grill the chicken skewers for 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  • Remove the skewers from the grill and serve hot. Garnish with fresh herbs or a squeeze of lemon if desired.

Notes

  • For a spicier version, replace the Espelette pepper with cayenne pepper.
  • You can use Greek yogurt instead of olive oil for a tangier and creamier marinade.
