Description

A creamy and comforting broccoli cheese soup, rich with sharp cheddar cheese and fresh broccoli. This delicious, hearty soup is perfect for chilly evenings or a satisfying lunch.


Ingredients

  • 6 Tbsp butter, cut into 1 Tbsp pieces
  • 1 cup finely chopped yellow onion
  • 1 large clove garlic, finely minced
  • ¼ cup + 3 Tbsp all-purpose flour
  • 3 ¼ cups low-fat milk (plus more to thin if desired)
  • 1 (14.5 oz) can low-sodium chicken broth
  • ½ cup heavy cream
  • 3 cups (packed) finely chopped fresh broccoli florets
  • 10 oz (2 ½ cups) sharp cheddar cheese or extra sharp cheddar cheese, plus more for serving
  • 1 oz (1/3 cup) finely shredded Parmesan cheese
  • Salt and freshly ground black pepper, to taste

Instructions

  • In a large pot, melt the butter over medium heat. Add the chopped onion and cook, stirring occasionally, for about 4-5 minutes, or until softened.
  • Add the minced garlic and cook for an additional 30 seconds, until fragrant.
  • Stir in the flour and cook for 1-2 minutes, stirring constantly, to form a roux.
  • Gradually add the milk, stirring constantly to prevent lumps. Then add the chicken broth, stirring until smooth.
  • Bring the mixture to a simmer over medium heat, and cook for about 5-6 minutes, or until the soup begins to thicken.
  • Add the chopped broccoli and cook for an additional 5-7 minutes, until the broccoli is tender but still vibrant.
  • Reduce the heat to low and stir in the heavy cream, sharp cheddar cheese, and Parmesan cheese. Continue stirring until the cheese has completely melted and the soup is smooth.
  • Season with salt and freshly ground black pepper to taste.
  • Serve the soup hot, topped with additional shredded cheddar cheese if desired.

Notes

  • For a smoother soup, you can blend part or all of the soup using an immersion blender or a regular blender.
  • You can adjust the thickness of the soup by adding more milk if it’s too thick.
  • For a lighter version, use a reduced-fat cheese and milk.
