For the Blueberry Filling:

For the Cobbler Topping:
- 1.5 cups all-purpose flour
- 1/2 tsp salt (or to taste)
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 6 tbsp unsalted butter (cold, cut into tablespoon-sized pieces)
- 1.25 cups half and half (10% milk fat)
Instructions
- Prepare the oven and baking dish: Preheat the oven to 375°F (190°C). Grease a 9-inch round or square baking dish.
- Make the blueberry filling: In a large mixing bowl, toss the blueberries with 2 tablespoons of flour, 1/2 cup of sugar, and lemon zest. Transfer the mixture to the prepared baking dish, spreading it out evenly.
- Prepare the cobbler topping: In a separate bowl, whisk together the 1.5 cups of flour, salt, sugar, and baking powder. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Add the wet ingredients: Pour in the half and half and stir gently to form a dough. The dough should be thick but not overly dry.
- Assemble the cobbler: Drop spoonfuls of the topping over the blueberry filling, covering it as evenly as possible. It’s okay if some of the blueberries peek through.
- Bake: Place the cobbler in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and the blueberry filling is bubbling around the edges.
- Cool and serve: Allow the cobbler to cool slightly before serving. It can be enjoyed warm or at room temperature.
