Treat yourself to these irresistible Bite-sized Ricotta Truffles! These creamy ricotta truffles are coated in smooth semisweet chocolate and dusted with cocoa powder for the perfect balance of sweetness and richness. A delicious, easy-to-make indulgence that’s sure to satisfy your sweet tooth!


Ingredients

  • 1 cup whole milk ricotta cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup unsweetened cocoa powder

Instructions

  • In a medium mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix well until smooth and blended.
  • Roll the mixture into small, truffle-sized balls and place them on a baking sheet lined with parchment paper. Freeze for 30 minutes.
  • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until the chocolate is smooth and fully melted.
  • Dip each ricotta ball into the melted chocolate, coating it evenly. Place them back on the baking sheet and refrigerate for another 30 minutes.
  • Once chilled, roll the truffles in cocoa powder before serving. Enjoy!

Notes

  • You can also use dark chocolate for a richer, slightly bitter flavor.
