Ingredients
Scale
- 1 cup whole milk ricotta cheese
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup semisweet chocolate chips
- 1/4 cup unsweetened cocoa powder
Instructions
- In a medium mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix well until smooth and blended.
- Roll the mixture into small, truffle-sized balls and place them on a baking sheet lined with parchment paper. Freeze for 30 minutes.
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until the chocolate is smooth and fully melted.
- Dip each ricotta ball into the melted chocolate, coating it evenly. Place them back on the baking sheet and refrigerate for another 30 minutes.
- Once chilled, roll the truffles in cocoa powder before serving. Enjoy!
Notes
- You can also use dark chocolate for a richer, slightly bitter flavor.
- If the ricotta mixture is too soft, freeze it a bit longer to help with rolling.
- For a twist, you can add chopped nuts or a splash of liqueur (like amaretto) to the ricotta mixture.
