Ingredients

  • 2 1/2 to 3 lb. Beef Roast (such as chuck, sirloin, rump, etc.)
  • 1 large Onion, chopped
  • 4 Chipotle Chilies, canned in adobo sauce (or 3 fresh jalapenos, chopped)
  • 2 Tablespoons Chili Powder
  • 1 teaspoon Cumin
  • 1 1/2 to 2 teaspoons Salt
  • 1 teaspoon Pepper
  • (1) 14.5-ounce can Beef Broth

Instructions

  • In a slow cooker, add the beef roast, chopped onion, chipotle chilies, chili powder, cumin, salt, pepper, and beef broth.
  • Cover and cook on low for 7-8 hours, or until the beef is tender and easily shreddable.
  • Once cooked, shred the beef using two forks and stir it into the sauce.
  • Taste and adjust seasoning if necessary.
  • Serve the shredded beef in tacos, burritos, or over rice for a flavorful meal.
