- 2 1/2 to 3 lb. Beef Roast (such as chuck, sirloin, rump, etc.)
- 1 large Onion, chopped
- 4 Chipotle Chilies, canned in adobo sauce (or 3 fresh jalapenos, chopped)
- 2 Tablespoons Chili Powder
- 1 teaspoon Cumin
- 1 1/2 to 2 teaspoons Salt
- 1 teaspoon Pepper
- (1) 14.5-ounce can Beef Broth
Instructions
- In a slow cooker, add the beef roast, chopped onion, chipotle chilies, chili powder, cumin, salt, pepper, and beef broth.
- Cover and cook on low for 7-8 hours, or until the beef is tender and easily shreddable.
- Once cooked, shred the beef using two forks and stir it into the sauce.
- Taste and adjust seasoning if necessary.
- Serve the shredded beef in tacos, burritos, or over rice for a flavorful meal.
Notes
- For extra flavor, marinate the beef overnight in the seasoning mixture before cooking.
- You can use fresh jalapenos for more heat, or adjust the amount of chipotle chilies to your liking.
