Ingredients

  • 2 ½ cups grape tomatoes, washed and dried
  • 1 (8 oz) brick of Feta cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • 5 tablespoons olive oil
  • ¼ cup chopped fresh basil
  • 12 oz bow tie pasta, cooked, drained, and kept warm

Instructions

  • Preheat the oven: Preheat your oven to 400°F (200°C).

  • Prepare the baking dish: In a baking dish, add the grape tomatoes and place the block of feta cheese in the center.

  • Season: Drizzle the olive oil over the tomatoes and feta. Sprinkle the Italian seasoning and salt evenly over the tomatoes and cheese.

  • Roast in the oven: Bake for 30-35 minutes, or until the feta is soft and golden and the tomatoes have burst and softened.

  • Prepare the pasta: While the feta and tomatoes are roasting, cook the bow tie pasta according to the package instructions. Drain the pasta and keep it warm.

  • Toss the ingredients: Once the feta and tomatoes are out of the oven, use a fork to mash the feta cheese and mix it with the burst tomatoes, creating a creamy sauce.

  • Combine with pasta: Add the cooked pasta to the baking dish and toss it with the creamy feta and tomato sauce. Sprinkle with fresh chopped basil and stir to combine.

  • Serve: Serve immediately, garnished with additional basil if desired.

Notes

  • You can use other types of pasta if you prefer, such as penne, rigatoni, or spaghetti.
