  • 2 cups cherry or grape tomatoes

  • 1 red bell pepper, diced

  • ½ small red onion, diced

  • 3 cloves garlic, minced

  • 8 ounces feta cheese

  • 4 tablespoons olive oil

  • 1 teaspoon dried oregano

  • 1 teaspoon sea salt

  • ½ teaspoon dried thyme

  • ½ teaspoon ground black pepper

  • ½ teaspoon red pepper flakes

  • 1 cup chopped baby spinach

  • 4 large eggs

  • Optional for topping: chopped fresh basil or fresh chives


Instructions

  • Preheat the oven to 375°F (190°C).

  • In a baking dish, add the cherry tomatoes, red bell pepper, red onion, and minced garlic. Drizzle with 2 tablespoons of olive oil, and sprinkle with dried oregano, sea salt, thyme, black pepper, and red pepper flakes. Toss to combine.

  • Place the block of feta cheese in the center of the baking dish and drizzle with the remaining 2 tablespoons of olive oil.

  • Roast in the oven for 25-30 minutes, or until the tomatoes are soft and burst, and the feta is golden and slightly browned.

  • Remove the dish from the oven and gently stir the vegetables and feta together, creating a creamy mixture.

  • Add the chopped spinach and mix it in, then make four small wells in the mixture.

  • Crack one egg into each well, being careful not to break the yolks.

  • Return the dish to the oven and bake for an additional 10-12 minutes, or until the egg whites are set and the yolks are still runny.

  • Garnish with fresh basil or chives if desired, and serve immediately.

Notes

  • For a more well-done egg, leave the dish in the oven a little longer until the yolks reach your desired consistency.

  • This dish pairs wonderfully with crusty bread for dipping into the eggs and feta mixture.
