- 2 cups broccoli florets (about 1 small head)
- 1/2 cup cooked bacon, chopped (about 4–5 strips)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (preferably panko)
- 2 large eggs
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper, to taste
- 2 tbsp olive oil (for brushing)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Steam or blanch the broccoli florets until tender, about 3-4 minutes. Drain well and chop into small pieces.
- In a large mixing bowl, combine the chopped broccoli, cooked bacon, shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Using your hands, form the mixture into small balls, about 1-1.5 inches in diameter, and place them on the prepared baking sheet.
- Brush the tops of the broccoli balls with olive oil for extra crispiness.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
- Serve warm as a snack or appetizer.
Notes
- You can substitute the panko breadcrumbs with regular breadcrumbs if preferred.
- For a more flavorful variation, try adding a pinch of red pepper flakes or some chopped fresh herbs to the mixture.
