  • 2 cups broccoli florets (about 1 small head)
  • 1/2 cup cooked bacon, chopped (about 45 strips)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (preferably panko)
  • 2 large eggs
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil (for brushing)

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Steam or blanch the broccoli florets until tender, about 3-4 minutes. Drain well and chop into small pieces.
  • In a large mixing bowl, combine the chopped broccoli, cooked bacon, shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Using your hands, form the mixture into small balls, about 1-1.5 inches in diameter, and place them on the prepared baking sheet.
  • Brush the tops of the broccoli balls with olive oil for extra crispiness.
  • Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
  • Serve warm as a snack or appetizer.

Notes

  • You can substitute the panko breadcrumbs with regular breadcrumbs if preferred.
