  • 2 ripe avocados, peeled and pitted
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup corn kernels (fresh, canned, or thawed frozen)
  • 1/4 cup fresh parsley, chopped

Instructions

  • Cook the rotini pasta according to package instructions. Drain, rinse with cold water, and set aside to cool.
