- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cups peeled and chopped apples
- 1/3 cup sugar
- 1/2 tsp ground cinnamon
- 1/4 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs and vanilla extract, mixing well. Pour over crust.
- In a small bowl, combine apples, 1/3 cup sugar, and cinnamon. Spoon over the cream cheese layer.
- In another small bowl, combine pecans and 1/4 cup sugar. Sprinkle over the apple layer.
- Bake in the preheated oven for 60 minutes or until set. Allow to cool, then refrigerate until chilled before serving.
Notes
- For a smoother crust, you can pulse the graham crackers in a food processor before mixing them with sugar and butter.
- You can add a little lemon juice to the apples to enhance the flavor.
- Let the cheesecake cool completely before refrigerating for the best texture.
