Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • 4 cups chicken broth
  • 1 lb boneless, skinless chicken breasts, cut into small pieces
  • 1 cup diced carrots
  • 1 cup diced celery
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add onion, garlic, and ginger. Cook until onion is soft, about 5 minutes.
  • Stir in turmeric, cumin, coriander, and cayenne pepper. Cook for 1-2 minutes, stirring constantly.
  • Pour in chicken broth and bring to a simmer.
  • Add chicken, carrots, and celery. Cook for about 15-20 minutes, or until the chicken is cooked through and vegetables are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro.

Notes

  • For a richer soup, add a splash of coconut milk at the end.
  • You can use bone-in chicken for extra flavor, but be sure to remove the bones before serving.
