For the Almond Cake:
- ¾ cup salted butter (room temperature)
- 7 tablespoons vegetable oil
- 3 eggs (room temperature)
- 1 ½ cups granulated sugar
- 1 teaspoon orange zest
- 1 ½ teaspoons almond extract
- 1 ½ teaspoons vanilla extract
- 2 ¼ cups all-purpose flour
- ¾ cup almond flour
- 1 ½ teaspoons baking powder
- 1 teaspoon salt
For the Amaretto Glaze:
- 3 cups powdered sugar (sifted)
- 7 tablespoons amaretto liqueur
- Finely chopped almonds (to top the cake)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, cream together the butter and vegetable oil until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Then mix in the granulated sugar, orange zest, almond extract, and vanilla extract.
- In another bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- While the cake cools, prepare the amaretto glaze by whisking together the powdered sugar and amaretto liqueur until smooth.
- Once the cake has cooled completely, drizzle the glaze evenly over the top.
- Sprinkle finely chopped almonds on top for a decorative finish.
- Slice and serve the cake at room temperature.
Notes
- The cake can be made ahead of time and stored in an airtight container for a couple of days. The glaze can also be prepared in advance.
