For the Almond Cake:

  • ¾ cup salted butter (room temperature)
  • 7 tablespoons vegetable oil
  • 3 eggs (room temperature)
  • 1 ½ cups granulated sugar
  • 1 teaspoon orange zest
  • 1 ½ teaspoons almond extract
  • 1 ½ teaspoons vanilla extract
  • 2 ¼ cups all-purpose flour
  • ¾ cup almond flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon salt

For the Amaretto Glaze:

  • 3 cups powdered sugar (sifted)
  • 7 tablespoons amaretto liqueur
  • Finely chopped almonds (to top the cake)

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a large bowl, cream together the butter and vegetable oil until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Then mix in the granulated sugar, orange zest, almond extract, and vanilla extract.
  • In another bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  • Pour the batter into the prepared cake pan and spread it evenly.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • While the cake cools, prepare the amaretto glaze by whisking together the powdered sugar and amaretto liqueur until smooth.
  • Once the cake has cooled completely, drizzle the glaze evenly over the top.
  • Sprinkle finely chopped almonds on top for a decorative finish.
  • Slice and serve the cake at room temperature.

Notes

  • The cake can be made ahead of time and stored in an airtight container for a couple of days. The glaze can also be prepared in advance.
  • For an extra almond kick, try using almond extract in the glaze as well.
