Ingredients
- 1 pound lean ground beef
- 1 cup chunky salsa
- 1 (10 oz) can red enchilada sauce
- 8 (8-inch) tortillas
- 1 (8 oz) package Borden Cheese Thick Cut Shredded Four Cheese Mexican (about 2 cups)

Preheat the Oven:
Preheat the oven to 350°F (175°C) and lightly spray a 9×13 inch baking dish with nonstick cooking spray. -
Brown the Ground Beef:
In a large skillet, brown the ground beef over medium-high heat. Drain the excess fat and return the beef to the skillet. Reduce the heat to medium-low and stir in the salsa. Cook until heated through, then remove from heat. -
Prepare the Baking Dish:
Pour about 1/2 cup of enchilada sauce into the bottom of the prepared baking dish. -
Prepare the Tortillas:
Warm the tortillas according to the package directions. Once warmed, add about 1/4 cup of the beef mixture down the center of each tortilla. Top with about 1 heaping tablespoon of cheese. -
Assemble the Enchiladas:
Tightly roll up each tortilla and place them in the baking dish seam side down. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese. -
Bake:
Tightly cover the dish with aluminum foil and bake for 30 to 35 minutes, until the cheese is melted and the enchiladas are heated through.
